Cute ones, like the 15 month old in my arms.

And the 28 year old one who often seems like a happy boy in a man's body. Trucks, tractors and farming. A boy's dream turned into a man's career.

Cars.

Like the one in the shop getting ready for a road trip.

Dinner.

Yummy ones shared with friends. Sloppy joe, ribs, homemade fries and onion rings. Cupcakes too.

Events.

Care group lunch.

Family game night.

Food.

Need essentials from the grocery store, but wondering how long I can hold off. We have plenty, just not exactly what I want. Make sense? I "need" sour cream, frozen broccoli, bananas, peanut butter, graham crackers, etc.

Gardens.

Thinking about what and how much to grow this year.

Start a garden at home or keep going with the big one at the family farm?

Hospitality.

Love thoughtful hosts.

Love being able to host.

I think I better finish up and be productive.

Friday, already? This week has been a bit of a blur, with extra work shifts and all. But Rachel reminded me that it's Friday, so here we go!

-Snow! At least for now, while it's still a "new" thing. We haven't had much this year, so I'm looking forward to the 2-4"/ 3-6" / 5-8" inches we are supposed to get overnight. Suppose one of those 3 forecasters will be correct, right?

-Warm blankets, cute baby and a movie playing. Love cuddling when my little man wants to cuddle (which is rare-- that boy is always on the move!).

-Warm house with no plans to leave it til Sunday morning church (although I have no problem leaving, just no plans to do so).

-Large bag of library books and DVDs just waiting to be enjoyed!

-Soup simmering in the crockpot.

-Our new (to us) fridge! It's huge! And clean! And bright! I'm such a lucky gal!

Thankful Thursday

It's Thursday and I am feeling thankful today.

-Thankful for my relationship with Jesus Christ.

-Thankful for my family.

-Thankful for contentment with my job and where God has placed me.

Miscellany Monday

Really random thoughts and observations from the weekend. I spent it on the couch with terrible neck/shoulder pain and a headache that rivaled all headaches.

1. My husband makes the most random food for meals. Thankfully this weekend it was really good. (Cream of chicken soup with corn. It was really good! We've been known to have mac & cheese with baked potatoes when it's his turn to cook.)

2. Entire seasons of TV shows on DVD are dangerously addicting. Like 24. I mean, I need to know what will happen to Jack Bauer next.

3. I think there is some good in the guilt I feel when I don't go to church. Does that make sense? I felt physically terrible and wouldn't have been able to sit on a folding chair for an hour and a half, but I really missed church and felt guilty for not being there.

4. I am grateful for my chiropractor, and think it's pretty neat that everyone in town calls him "Doc" and that I know exactly what he eats for breakfast every morning. 2 eggs, very over easy, hash browns, bacon, two orders of lightly done wheat toast and a large glass of milk. (Disclosure: I am a waitress and he comes to the cafe for breakfast with the farmers 5 days a week).

5. It was nice not leaving my house for over 48 hours. It was even nicer that my husband was able to get away from the farm to take care of me and the little guy.

6. Matt's mind has to be the coolest thing ever. I love that he knows how to put the lid on his sippy (not really, but he helps), and that he says "cheese" for those cheeseballs that he loves (thank you husband for thinking they're healthy. Sigh.).

7. We have new neighbors. I really need to make bread or something to take to them to welcome them. But as previously mentioned, the couch has been my best friend.

FOR TODAY, Thursday, December 29, 2011 -- last one for the year

Outside my window... the sun is going down and creating a beautiful sunset. Most of the snow has melted but promises to refreeze into an icy mess.

I am thinking... about 2011. A bit of a rough year for us. God still continues to provide.

I am thankful for... my family, and for reduction of hours around the farm this time of year. Thankful for Matt's hour nap which allowed me to do office work. He fell asleep again in my arms and I'm typing one-handed.

From the kitchen... leftover chicken & bean soup and chicken salad sandwiches, with coconut cake for dessert, from last night's family party

I am wearing... khakis and work shirt. I smell like french fries.

I am creating... I am hoping to "un-create" the Christmas decorations and get the house back in order

I am reading... just started "Beach Girls"

I am praying...

-Praying for our church building, which has a mold issue, far worse than we imagined.

-Praying for little Sophie, 2 years old, who has brain cancer

-Praying for wisdom regarding employment for my husband and myself

I am hoping... for safe travels for traveling family members

Around the house... excited to use my new Rubbermaid Reveal Mop

One of my favorite things...my grandma's sour cream cookies. We get a tin for Christmas every year. YUM!

Random thoughts and observations...

-Matt is the perfect height to see out the windows. This is great for falling snowflakes or cement trucks coming to the house next door. He is fascinated.

-Matt is also the perfect height to get into ev.er.y.thing. Childproofing? Yeah, need to take that to the next level.

-Waking up to a tidied up kitchen is a great feeling.

-Appreciating that our church sends home a verse (or verses) for each day of the week, for Advent, leading up to the birth of our Savior. Love our Bible-believing, Bible-preaching church.

-Had an unpleasant shopping trip to Kmart this week. Two very unfriendly (rude) employees. Opinion-- call the manager or let t go?

-Followed the Kmart trip with one to Walmart and had a very friendly and polite cashier. She was full of joy.

-I've had 5 days off from work (just the way the schedule works out) and I feel like I haven't been there in ages. Also feel like I should've been a little more productive at home.

-Life through the eyes of a 14 month old is fascinating.

Rachel inspired me to write a note for my Friday Favorites. I've noticed that my favorites are often things I'm thankful for.

Dear self,
As you enjoy that cup of coffee and few minutes of quiet, it's okay that you're not stressing over your half-mile-long to-do list. You should, however, accomplish something while your husband has your son so that when they arrive home it doesn't look like you were drinking coffee and blogging the whole time.

You should also finalize plans for Sunday's caroling fellowship meal at church. Browning that 30lbs of beef for sloppy joes is a great start. Remember how much you enjoy feeding people, and remember how much you enjoy seeing the variety of side dishes and desserts that are brought for fellowships.

It's great that you're thankful for Hospice and that you want to do Random Acts of Kindness for your birthday, ala www.thebirthdayproject.com, and it's pretty neat that you're combining the two things. Remember to take plenty of card-making supplies to tomorrow's family cookie/craft day. Everyone will be glad to make a card of encouragement for a Hospice patient, or a card of thanks for a Hospice nurse. And don't forget to soften the butter for the orange slice cookie dough you need to make tonight.

Speaking of cookie dough and all things kitchen related, you are keeping an eye on that browning beef, right?

I know it's your favorite time of year. Well, one of them. I know you think all times of the year have their perks. But this time of the year involves sparkly lights, great food and traditions. Feel free to go all out on decorations, or feel free to just do the minimum because your 13-month old will probably tear the place apart. Self, just enjoy it.

Self, remember that being a mama is one of your favorite things in the world, even when the Matty-destroyer has once again snuck into the bathroom and rolled all of the TP off the roll, or has pulled all books off the shelf, or has pulled every single toy out of the toybox and your living room looks as if a tornado came through. Take a deep breath, look at his cute innocent face, and remember that someday you'll miss these moments. Someday your home may actually look clean and organized.

Now finish that cup of coffee and daydreaming and get back to the kitchen to finish the sloppy joes. And the cookie dough. Remember, it's your favorite time of year.

FOR TODAY, Monday, November 21, 2011 -- apparently it's been a whole month since I've done this!

Outside my window... looks to be a cool and overcast day

I am thinking... about my to-do list. We're going to have visitors arriving tomorrow, so today is cleaning day.

I am thankful for... my husband's day off (every other Sunday)-- it is so nice to feel like a "normal" family for just one day! No milking, no chores-- complete avoidance of the farm. We went to visit a friend overnight Saturday-- such fabulous hosts. Attention to every detail-- children's books and toys in easy reach of Matt, extra toiletries in case we forgot, a delicious breakfast and lunch, etc. So nice to be pampered.

From the kitchen... the fridge has been cleaned out and organized. I vow to waste less food.

On this week's dinner menu:

Monday: leftovers

Tuesday: taco rice with chips

Wednesday: broccoli cheese soup and sandwiches

Thursday: turkey, turkey, turkey! (And Birthday Cake for my husband)

Friday: leftovers, maybe homemade pizza

I am creating... I am still in the mood to declutter and clean out. I want to have a trunk full of stuff to deliver to Goodwill. We have too.much.stuff. Update-- I am doing pretty well at this! (Pat myself on the back... the Goodwill piles keep getting larger).

I am reading... "Words that hurt, words that heal" by Carol Mayhall. It's our Bible study book for this fall. And a new magazines in the mail: Parents & Country Living

I am praying...

Around the house... In my preparation to Swiffer the kitchen, Matt stole the Swiffer which is such a great toy! He just occupied himself with that for a good ten minutes. And a plan to make a welcoming home for visitors.

One of my favorite things... Thanksgiving day with my crazy family-- lots of food, laughter, noise and fun.

Hello friends... it's been awhile.

I've been MIA, but if you looked, you would've found me at work or in the car, or if you did find me at home, I would've been half asleep. At least that is how the last few weeks have felt.

But I'm here now, and thankful for Rachel at finding joy, and for all of these random things:

-Matt likes to say "hi" to everyone and everything, including inanimate objects.

-Matt has a variety of new words including doggie, everyday (???), bye-bye, and ba (which could be bottle, ball or sheep, depending on what he wants).

-We had BEAUTIFUL 65 degree fall days early this week. Oh, how I love that weather. I'm so thankful for sunshine.

-I was able to do a LOT of laundry on those beautiful days. Perfect breeze and sunshine for drying clothes quickly. YAY! (Said clothes may still be sitting, folded of course, in laundry baskets waiting to be put away).

-Getting out of work early today because it was slow. Slow isn't necessarily my favorite thing, but for once I didn't have to stay late.

-I really like Pandora. Matt likes music too. Our current shuffle is on worship music, Disney songs and Broadway.

-Eagerly anticipating the holidays. And making plans for them. And attempting to be finished shopping early this year, and on budget too. I love giving gifts, and I love when I have ideas for hard-to-shop-for people.

-One of my good friends just got engaged! And she asked me to be a bridesmaid. Can you believe I have never been one before??

-Thankful my husband had a few free hours today so he could watch Matt and I could take a much-needed nap. I am in the beginning stages of some kind of sinus/chest/cough thing.

-Quality "hanging out" time with Christian friends... the body of Christ is a wonderful thing.

Outside my window... last day of warm and sunny autumn weather-- my husband is hoping to finish planting winter wheat and baling hay

I am thinking... about the last year... Matt will be a year old FRIDAY!!

I am thankful for... the chance to be my baby's mama, my mom visiting, my brother flying home from Europe today/tomorrow, the sunny beautiful weather

From the kitchen... this week's list includes baked eggplant with ground turkey & peppers, homemade bread, funfetti cupcakes (for a cute birthday boy), nachos/tacos, shredded beef, cheesy potatoes, and whatever my chef-brother whips up when he gets here Wednesday!

I am wearing... sweats and flipflops

I am creating... my mom and I are tackling my huge to-do list, including painting, stripping paint, organizing and decorating

I am reading... "Words that hurt, words that heal" by Carol Mayhall. It's our Bible study book for this fall.

I am praying...

-Praying for our church building, which has a mold issue. Work began last week and is anticipated to take 6 weeks.

-Praying for little Sophie, 2 years old, who has brain cancer

-Praying for my brother who is traveling home from Europe today/tomorrow

I am hoping... to be comfortable with the progress we've made decorating/fixing up the house for Matt's party (some people that are coming haven't seen it in months!)

Grief

Great news: My mom is visiting for an entire week!

Sad part: My dad is obviously not here with us.

Somehow in dealing with his death, I can put away the emotions (for the most part) because I'm 400 miles from where I grew up, I have a baby and a husband to take care of (busy!), and I wasn't used to seeing my dad daily. I don't know if that makes sense.

When I'm in PA with my mom and the rest of my family, the loss of my dad seems greater. It sits on my heart, like a weight. The tears flow freely. His chair is empty. His shoes aren't sitting by the back door. I drink coffee by myself.

When I'm home [my married home] I can hide all of those emotions and press on with life. I see his picture. It makes me smile.

Then my mom comes to visit. By herself. Without my dad. And the door of emotion opens up and it all comes sliding out.

I want to hang shelves in the dining room. My dad would've done that for me, like he did in my bedroom growing up. I need a piece of beadboard cut with the saw. He would've done that too. He would've helped move furniture. He would've played with Matt. He would've taken us for ice cream. He would've listened to me, regardless of whether the information was important or trivial.

I miss my dad. The void is so big...

And yet I try to shove all of those emotions back into the closet so my mom doesn't have to see them. She knows they're there, but somehow, not showing them means to me that I am being strong for her.

Focus on the Family has some good articles and quotes. I felt like this pretty well summed it up:
"Grief is a journey, often perilous and without clear direction," writes author Molly Fumia. "The experience of grieving cannot be ordered or categorized, hurried or controlled, pushed aside or ignored indefinitely. It is inevitable as breathing, as change, as love. It may be postponed, but it will not be denied." ¹

^{I suppose this rollercoaster of emotions has become the norm in my life. I'm going to have to deal with it sometime, little by little. I'm okay with that, hard as it is.}

"Did you feed him?" [You really think I'd let him starve?]

"The laundry isn't folded." [Your hands aren't busy right now.]

"What took you so long to get out of work?" [A late customer. My boss. Any number of things.]

"What else did you discuss?" [Do I need to tape record every conversation so you can listen in?]

"Why do we always have food go bad in the fridge?" [Because you are tired of leftovers.]

"There's work you could have been doing instead of going for a walk." [I need fresh air and girl talk to keep my sanity.]

"This house is a disaster. We can't even have people over." [I'm not your maid. Take off your dirty shoes when you come in the door.]

These may just be thoughts and comments, but they come across like knives, swords, fightin' words. Accusations. Questions. Doubts. Criticisms.

Can't measure up. Can't even figure out what the measuring system is.

Marriage is tough, you know? It's not nearly as rosy as engagement pictures and romance novels make it sound. We have expectations. We bring baggage. Expectations and baggage sometimes collide.

Oh sure, I could give an entire list of things my husband said that hurt. He could probably do the same for things I've said (although he says my method of attack is less words and more tone of voice. Ahem.). There are many, many minutes when I want to throw in the towel. Heck, I'll throw in the whole laundry basket.

But then there's God. He has a plan. He knows the ins and outs. He also has a reason for putting the two of us together. So I'll trust in that. And I'll pay more attention during Ladies Bible Study as we read "Words That Hurt, Words That Heal" by Carol Mayhall. I'll bring my highlighter and my pen. The Lord already knows I'll need them.

FOR TODAY, Tuesday, October 4, 2011

Outside my window... the skies are supposed to be clear today... they're getting started on that. :) We'll have more warm fall weather this week, sun too, which will be a blessing after the large amounts of rain we've had. There's hay to make!

I am thinking... about my daily life... about implementing a schedule of sorts... a flexible one as my work days vary.

I am thankful for... those pesky ants are still around! The exterminator lady said $125 to come out to the house. Ouch. Back to the hardware store for me! (I am no longer thankful for those ants, haha). I'm thankful for my baby, who is one week closer to being a year old, and I am thankful for seeing the world through his eyes.

From the kitchen... easy meals this week because I'm helping with evening milkings. I made a cheesy chicken noodle casserole to take to my cousin who just had a baby.

I am wearing...scrubs and a sweatshirt

I am creating... a redecorated house! My husband and I are on a roll... lets hope the progress continues! Also working on ideas for Matt's birthday party.

I am praying...

-Praying for our church building, which has a mold issue. Work began yesterday to fix it.

-Praying for little Sophie, 2 years old, who has brain cancer

-Praying for my brother who is spending 5 weeks in Europe. He's about 4 weeks into the trip and is homesick (although he's having a great time).

I am hoping... to find a good deal on ground beef, or for my in-laws to schedule another steer for butchering. We have one pound of beef left. Think we're cutting it a bit close! (Don't worry, we have other food in the freezer.)

Around the house... last night I cleaned out a closet in anticipation of furniture rearrangement once my mom arrives. Today I need to clean off the huge shelf/rack that is going into the closet.

Sunday we'll be worshiping with our church family in a different location as our church is being "fixed."

FOR TODAY, Monday, Sept 26, 2011-- where is September going??

Outside my window... a rainy day here, which is okay by me. Lots to do around the house.

I am thinking... when I miss church my week is off to a different start

I am thankful for...ants, surprisingly. I actually hate the little buggers, but they've found a way into our kitchen (not near the food, just kind of everywhere) so I had a reason to deep clean (i.e. clean the dish rack). The ladies at the hardware store told me everyone in town is having issues with ants this year. Sigh.

Oh, and thankful for some great sales at Rite Aid! I got a few things we needed and I saved a bunch of money!

From the kitchen... we were gifted with a big basket of squash, peppers and eggplant. Dinner will be eggplant stuffed with peppers, onions, turkey sausage and cheese. I'm optimistic.

I am wearing... jeans, maroon t-shirt and grey button down sweater

I am creating... a redecorated house! My husband and I are on a roll... lets hope the progress continues!

I am reading... Parents magazine... some articles are good, some are not.

I am praying... for God's will in the last few days of September as we attempt to sell the rest of the restaurant equipment. Sad, but we're really ready to move on. Now we just need the equipment to sell so we can pay the rest of the loan.

Around the house... a new window seat in the living room! It's about a third of the way finished, but it's great already! Makes the room seem bigger. It will give us added storage and seating when it's finished.

Baby crawls

Matt has been crawling for about two months now, so he pretty much has it mastered. His newest thing? Fast crawling, but with smacking of hands on the floor. Picture the elephants marching in The Jungle Book, but in fast forward. It's hilarious.

I love Friday. It's even better when I don't have to work Saturday or Sunday.

I love fall weather. And pumpkin flavored coffee. And pumpkin donuts. And pumpkin bars. [But not really pumpkin pie.] I need to find some pumpkin.

I think it's adorable that Matt found the alphabet magnets on the fridge and played with them, occupying himself long enough for me to do dishes. YES!

I love the coziness of fall. [I am not at all ready for winter. It is only September 16, afterall!]

I love the motivation to purge... need to clean out another closet. Wish Matt was on my schedule and would agree to nap so I can use this motivation.

I love great blogs like Rachel's, Kim's, Janssen's and Melanie's, just to name a few. They're all great in their own way, and they all motivate me in different aspects of my life. FOR TODAY, Thursday, Sept 15, 2011-- first day I've been home this week!

Outside my window... it's a cloudy and brisk fall morning. The leaves are still green.

I am thinking... about my to-do list for the day, and how Matt-time will take priority, as always. (It shows in my house!)

I am thankful for... hot cups of coffee on cool mornings. It's the first morning that the kitchen floor has been cool/cold.

From the kitchen... I think a Crock-Pot meal is in order

I am wearing...pajamas

I am creating... need to create 1st birthday invitations. Just finished a "going away to college" basket for my brother-in-law (food, cleaning supplies).

I am reading... I need to be reading my Bible. I've been settling for Matt's First Bible Stories lately-- sometimes I think the simplicity of that is better for me. You know, some days just require straight-to-the-point stories.

I am praying... for God's will in the last two weeks of September as we attempt to sell all of the restaurant equipment and finish cleaning out the space. Sad, but we're really ready to move on. Now we just need the equipment to sell so we can pay the rest of the loan.

-Praying for our church building, which as a mold issue.

-Praying for Matt to gain weight. The doctor would like him to be gaining more weight than he is, and our next weigh in is October 19. He needs to gain about a pound. If he doesn't gain the weight the doctor will run some tests. I have to admit I am not concerned, nor am I surprised that my baby is small. The doctor is just being cautious, but is not overly worried.

I am hoping... to get everything unpacked and organized from our trip. We brought home a lot of restaurant memorabilia (decorations, etc) and it is in piles on the sunporch. My mom is bringing the big stuff (jelly cupboard, decorated ladders, etc) next month.

Around the house... some piles to put away, and I'm sure it could use a good cleaning, but it's cozy and comfy and that's what matters!

FOR TODAY, Tuesday, Sept 6, 2011

Outside my window... fall weather has arrived rather abruptly. Saturday was 91 and Monday was 65. Breeze, clouds, typical fall day. It's beautiful and wonderful, but I wasn't prepared...

I am thinking... about my lack of blogging, and my daily schedule / priorities / responsibilities / etc

I am thankful for... food on the table. Our garden didn't fare so well this summer but we haven't gone hungry! Friends have shared their garden bounty, and for that, I am thankful. We love fresh produce.

From the kitchen... homemade creamy, cheesy potato soup and a side of fried eggplant (what else do you do with eggplant besides fry it? Really, I am open to suggestions!)

I am wearing... jeans and a tshirt, noticing that the jeans are too loose. I really need to go through my clothes. I own too many.

I am creating... decluttering, starting with magazines. I love my Country Living and other magazines, but they accumulate quickly and take up space. I am going through, issue by issue, and pulling out pages that inspire me. The rest of the magazine hits the recycling bin. It's like the old version of Pinterest. :)

Also creating a design plan... getting a new piece of furniture (an old jelly cupboard that has been sitting in my parents' restaurant that will soon make it's home in my kitchen) and beginning the furniture shift. I have a goal of having a semi-finished house by Matt's birthday party (mid-October). This includes painting, rearranging and doing small odd jobs that just don't get done.

I am reading... I haven't read anything in awhile, but thinking about "Heaven is for Real." Have you read that? Wow.

I am praying... for my cold/allergies to clear up ASAP.

I am hoping... still hoping a restaurant buyer comes through. We're in the 11th hour (is that the right saying?). We do have a lead on a person who may want to buy all of the equipment (just not the business). At this point, that's great!

Around the house... a beautiful chilly breeze blowing through the windows, which makes potato soup and blankets all the more enticing

One of my favorite things... my baby's laugh, which gets louder the more tired he gets

A few plans for the rest of the week... traveling to PA to help close my family's restaurant after 6 great years. Bittersweet, indeed.

Thank you, praying friends! Kari is making great progress! Thank you, God, for this miracle! She's still in the hospital, and still has a long road of recovery ahead of her, but she was able to speak today. Thank you for taking time to pray!

My dear praying blog friends... would you add another prayer to your list? It can be a quick one... God knows the details.

My friend, Kari, had a beautiful little boy last week. He's doing wonderfully and has been released from the hospital. She, however, is not faring so well. She had pregnancy complications which have been diagnosed as HELLP Syndrome. Kari had liver, heart, lung and kidney failure. Doctors were able to "fix" the heart and lungs, and her liver is doing better (although they have her on a transplant list, just in case), but she is still having kidney failure and a variety of other issues. She has been transferred to a wonderful hospital where they are monitoring her closely in the ICU. She is sedated and hasn't been awake for a few days.

Please pray for Kari's health, for strength for her husband, Mike, and for wisdom for the doctors and nurses. Mike and Kari believe in God, and know that He holds us all in His loving arms.

I'm not sure how it happens, or why it seems like it happened all of a sudden, but really, when did we get so old?

When did we get to be old enough that our friends post Facebook profile pictures of their kids (we do it too!), plan birthday parties and play dates, and discuss teething and diaper rash? When did we get to be old enough to discuss house repairs, property taxes and car payments? When did we get to be old enough that we only run into people at weddings and funerals?

Why does it seem like I blinked my eyes and went from 21 to 27? How is it that my youngest brother-in-law, who was a mere teen when I met him, is headed off to college in a few weeks? How is it that babies I held in church are walking and talking? How is it that we [as a peer group] go from our first baby to full-fledged families? [No, I am not pregnant. Thank you.]

It seems that lately life is rushing past my front door. I'm an adult. I'm one of those people I looked up to when I was a teenager. I need to be the example. I'm the mom with a baby on her hip. The wife with baskets full of tomatoes and peaches to can. For my family. For our dinner. I'm the person with the checkbook and the mortgage payment and the property taxes. I'm married to the man who mows the lawn, washes the cars and works a ton of hours to support our family.

When did this happen? When did we get so old? And how didn't I see it coming?

Outside my window... looks like another great day for open windows-- slight breeze and a high of 81

I am thinking... about next week's county fair

I am thankful for...our Young Marrieds care group. 4 couples were able to get together Sunday evening and it was a great time of fellowship and discussion

From the kitchen... enjoying homemade toast and hot tea for breakfast

I am wearing... gym shorts and an old tshirt

I am creating... my food list for fair week (things I can make ahead of time and freeze, like cookies and bbq)

I am reading... grocery ads. That's about all I seem to have time for.

I am praying... for energy... I seem to be dragging these days. A sore throat may be the culprit. Praying this "illness" leaves my system ASAP.

I am hoping... for the business to sell quickly (there's a buyer in the process, but the process seems to be taking for-ev-er)

Around the house... decided to paint the dining room floor (it was in bad shape after we ripped up carpet months ago). It's halfway finished, and although I'm not totally in love with it, it's much better than what was there before.

The Beach Life

As I spent the last few weeks pondering, and not laying on the beach as planned, I thought about the good things that come of a week at the beach. Sure, there's tanned skin and lighter hair, but there's really so much more.

When we spend a week at the beach it's my whole family together. Brothers, nieces, nephew... it's a full house. We take time to enjoy each other. To catch up on each other's lives. We cook and eat great food, taking time to plan each meal and enjoy our favorites. We savor the waves crashing onto the shore, the sunrises and sunsets. We go for walks and explore. We take time to think, to reflect and to enjoy. We are deliberate about making sure we do all of our traditions (ice cream trips, sandcastles, boogie boarding, etc). We take pictures, we laugh and we love.

Shouldn't "real life" be more like beach life? Shouldn't we take more time to enjoy the little things? The beauty in each day, each leaf, each ray of sun? Shouldn't we make our family our priority? Breathe, relax, enjoy.

I want to live more of a "beach life."

Of course, it would be a plus if there was an ocean outside, but that's not essential. I can still live a "beach life" without crashing waves and warm sand.

We've been having more fall-like weather, or at least a reprieve from extreme heat. This week we were in the 70s. Hallelujah! As summer is winding down, I thought I'd share a list of what I am looking forward to in the coming weeks...

-high school football!

-fair week (we love our county fair, Aug 22-28-- animals, shows, contests, food!)

-continuing cooler temps (no more 90s, hopefully!)
-open windows and cool nights for sleeping!

-the desire to cook more (cooler weather encourages me!)

-sweet corn and tomatoes to be put up

I am thankful for... hit the "jackpot!" at the grocery store the other day-- discounted produce that was on the sell-by date, that was still in great shape, that is now in my freezer :) -- broccoli, carrots & mushrooms

From the kitchen... thinking spaghetti casserole and a tossed salad for dinner, with homemade bread

I am creating... a full freezer-- we are working on re-stocking as we find good deals

I am reading... the thoughtful cards that continue to arrive in the mail. I am thinking I'll work on a reading list for this winter when there is more time to read.

I am praying... for energy... I seem to be dragging these days.

I am hoping... this weekend's events are a lot of fun! And hoping all the hay gets baled and wrapped before the next rain storm

Around the house... childproofing. I love watching my curious baby explore, but I am quickly figuring out all of his tricks.

Outside my window... slightly overcast with a chance of rain today. Very humid, but temps are in the low 80s.

I am thinking... about my to-do list, which is never ending, and which I am grateful for!

I am thankful for... gracious family, friends and church family who have uplifted us in prayer. Thankful to be able to spend two weeks with my family (thankful that my husband, siblings and myself were all able to have off work).

From the kitchen... it's semi-clean, yay! A few leftovers for lunch, and some fresh tomatoes, green peppers and banana peppers from the garden.

I am wearing... khaki shorts, a maroon t-shirt and adidas sandals

I am creating... memories. My 12 year old niece, Allie, is staying with us this week. Matt loves the extra attention.

I am reading... the Bible, the pile of mail, and a few magazines

I am praying... for my mom, and for Matt who is teething

I am hoping... the good memories carry us through. The last few days (weeks) contained many precious memories, like when Matt would sit on my dad's bed with him, and dad, who wasn't talking much, would hold onto Matt's foot, and the usually wiggly Matt would sit still and watch, as if they were both savoring the moment.

Around the house... I had high hopes for accomplishing a lot while Allie is here to entertain Matt, and while I've been productive, I haven't crossed off nearly as many things as I'd like

One of my favorite things... family time, especially as I watch my nephew (15) and nieces (13 & 12) mature into young adults, and as I watch my brothers play with Matt

A few plans for the rest of the week... my mom is coming to visit (to pick up Allie), so we're going to tackle the jungle (aka my flower beds), reuniting with my church family (it's been almost a month!), and plugging along one day at a time.

Outside my window... we just had a glorious rain shower. Heavy rain in some areas, but thankful for whatever amount we get at this point. I can see my very overgrown flowerbeds (the weeds are fabulous growers!).

I am thinking... about my dad, about my housekeeping skills (or lack-there-of a lot of the time!), about the beach

I am thankful for... Hospice helping my dad (they really are WONDERFUL!), thankful for Matt taking a nap (he will probably wake up now that I said that), and thankful for YOU, wonderful blogger friends! Also thankful that the garden is producing!

From the kitchen... bread in the breadmaker

I am wearing... khaki shorts and a light blue t-shirt, barefoot of course!

I am creating... lists, piles and full suitcases

I am reading... the Bible, and "The Excellent Wife." I'm also doing a study guide with TEW. I plan to read a few novels while at the beach.

I am praying...

-for my dad's health... cancer officially terminal and spreading. Focusing on pain management and keeping him at home. Hospice has been wonderful! Please pray for me to be able to discuss my faith more openly (especially with family members).

I am hoping... my dad is able to enjoy this beach trip

Around the house... does anyone else get frustrated when they clean and it doesn't look like it? All of the "old" stuff in our house is so worn/stained/etc that you can't tell when the floors have been cleaned. Don't get me wrong-- I am thankful for my home, but I wish it looked a little nicer.

It is one of those days. We all have them. I apologize.

My baby has bad diaper rash. He refuses to lay still for a diaper change, and instead, thrashes about like a wild animal.

My baby thinks sleeping is optional. A half hour nap is sufficient for the day, right? I am very jealous of parents who have well-napping babies.

My baby was thisclose to finally falling asleep tonight and a few kids outside were screaming at each other and my baby woke up and started crying. Sigh.

My throat feels like it's on fire! Gargling with salt water and taking Tylenol is just not cutting it.

The toilet is leaking water all over the bathroom floor. My solution? Put towels on the floor to soak it up. Hope my husband can fix it later.

Maybe that's why everything else seems so rotten today. I'm in a "don't feel good, frustrated because the baby is upset, frustrated because the dishes multiply like baby rabbits, and frustrated because I'm 400 miles from my parents" kind of mood.

Of course, I could be washing those dishes instead of typing this. But this was more appealing.

Back Porch Gardening

We have a real, and rather large, garden at my in-law's farm. The soil is great, the rototiller is there, and the ground was already a garden. But it's 6 miles away. I know it's not really that far, but it's nice to have easy access when you're making dinner.

This year I planted green peppers and cherry tomatoes in pots on the back porch, and lettuce in the flower bed. So far they're surviving the crazy squirrels and cats that roam the neighborhood.

We'll see how well this works. Plus, pots are easier to weed than the really big garden. :)

I am thinking... about my dad. I'm so thankful for him!

I am thankful for... being able to work part-time so that I'm still able to be home quite a bit!

I am creating... unless you count laundry piles as creating something, I've got nothin'!

I am reading... the Bible, and "The Excellent Wife." I'm probably the only person in the world who didn't know this, but if you read 3 chapters of the Bible a day, you can read the whole thing in a year. I am now attempting it. That seems very do-able.

I am praying...

-for my dad's health... bad news yesterday. Cancer is spreading. :( He's currently in the hospital on pain meds and awaiting radiation.

-for my niece and nephew at church camp this week. Praying for my niece to develop a relationship with Jesus (my nephew has one).

I am hoping... to find my energy (perhaps I should be napping with Matt)

Around the house... the AC is running (so thankful for AC)

Pondering these words... "be not anxious..." and pondering this thought-- why does my baby take such short naps? He took a 3-hour nap yesterday for my husband, but 45 minutes is his longest nap for me in recent memory.

I called the pediatrician's office this morning to schedule a well-baby checkup for next month. I figured I'm at least a month in advance, so scheduling shouldn't be difficult. (Please note they only have their calendar/schedule finished 6 weeks in advance.)

Next available appointment? July 27.

We love Matt's pediatrician. He's down-to-earth, knowledgeable and real. He doesn't get overly excited that my baby is small. He loves to make my baby laugh. And he answers my questions.

Apparently everyone else thinks he's great, too.

Grammy

Would you please pray for us, as a family, as we spend the next few days traveling, visiting, reminiscing, and saying goodbye to Grammy?

She was a woman with zest for life. If you made her mad she let you know. If you made her happy she let you know. If you stood still for just a brief second, she took your picture.

She never missed a chance to reminisce about "the good old days," or to offer you food. She was known for feeding everyone. Dinner, snacks, pizza or dessert, whatever it was, she did it in a grand way.

Matt is her second great-grandchild. This was the first time she met him and she was so excited!

Someone described her as "Facebook before there was Facebook." She was the glue that kept us all together, and kept us up with each others news. It took one phone call to Grammy and you knew what all of your cousins were up to, as well as all of her friends in Florida (who you never met, but swore that you knew).

She'll be missed, that's for sure. But we have so many memories to keep us comforted.

These lovely ladies think they need to be milked twice a day, every day. I jokingly call them "high maintenance" but my husband reminds me that they're the ones who pay the bills.

I try to remember that when it's my turn to help milk.

Even when I'd really rather take a nap. :)

I shouldn't complain... at least I get volunteered to help with evening milking, not crack-of-dawn milking.

I am thinking... about my sweet Grammy who passed away Saturday. She was 85 and "ready to go home," as she put it. Her heart simply gave out... God called her home. Rejoicing that she's with her husband again, but sad that she's not on earth with us.

Enchilada Casserole

This yummy concoction turned out so well that I had to share it with you.

Enchilada Casserole (aka Lazy Enchiladas)
1 lb ground beef, browned
1/2 onion, diced
1 can (10 oz) enchilada sauce (mild)
1 can (15 oz) cheese sauce (nacho or cheddar)
1 cup (about 1/2 of a 16 oz can) refried beans
1 cup salsa
3 flour tortillas
Sour cream, for serving

Cook the onion with the ground beef. Place a layer in the bottom of an 8x8 casserole dish. Top with a layer of enchilada sauce. Top with one tortilla. Layer refried beans and cheese. Repeat ground beef, enchilada sauce, tortilla, beans, cheese, etc with as many layers as you'd like. I topped my casserole with one flour tortilla and salsa. Bake in 375 degree oven for 20-25 minutes. Serve with sour cream.

My husband and I loved this. It wasn't spicy at all, so if you prefer a spicy dish add a hotter enchilada sauce or hotter salsa. Some chili powder or jalapenos would be a great touch too!

This all came about because I bought a HUGE can of cheese sauce. It was on sale for $7-something, and the regular size 15 oz can was $2.83, so I figured this was a bargain. Stay tuned to hear how tired we get of cheese sauce. So far we've had this casserole and plenty of chips and cheese. We've barely made a dent.

Outside my window...the sun is shining and the breeze is blowing. The American flag waving is a beautiful sight. Our town lines the main streets with flags on holiday weekends.

I am thinking... about what to tackle first, and the best way to paint and redecorate rooms. And wondering why we can't get rid of these ants! They're everywhere-- anyone else having problems this spring?

I am thankful for... freedom and salvation-- "Two men died for you. The American soldier and Jesus Christ. One died for your freedom, the other for your salvation." --(I keep seeing this, but don't know who the credit belongs to.)

From the kitchen...A full fridge. I think enchiladas for dinner. We're on a nacho cheese kick.

I am wearing... gym shorts and a tshirt. A fashion statement I am not.

I am creating... a de-cluttered and comfortable home.

We hear it over and over... life is short. Life is short. Life is short.

Then there's the cliches, "God took him home too early," or "He died too young."

God knows.

He knows that there is no such thing as "too early" or "too late." He's God. He's always right on time. Even when that timeline doesn't match up with ours.

Does it make it any easier?

No. It doesn't.

Death, from a worldly perspective, is hard.

God knows.

Especially when the one who dies is 21. In the prime of his life. Laughing. Having fun. Enjoying life. Seizing the moment.

It's hard when a parent has to bury a child. To wonder what their life would have looked like if they had been on earth til an old age.

God knows.

He knows the struggles, the tears, the heartache. The absolutely large gaping hole.

And all we can do is pray. Trust and pray. Mostly pray.

**A mama friend of mine, a woman I look up to, lost her [21-year-old] baby today. Give your children an extra hug, and remember that life is short. And please say a prayer for Ryan's family and friends as they mourn his death. Ryan was also a friend of my husband.

In the midst of days and weeks of rain and clouds, I must remind myself to be thankful. I heard that April was a record setter for rain which is not surprising. It felt like it rained every day (only a slight exaggeration, I'm sure). It is amazing how much the weather can impact my mood.

-I'm thankful that we're not having a drought.
-I'm thankful we only had minimal damage during wind storms.
-I'm thankful the grass is green.
-I'm more thankful for the sun every time I see it.
-I'll be really thankful for veggies from the garden (because they seem so far away!).
-I'm thankful we (the farm) were able to get straw at a reasonable price (we can't put the cows out to pasture yet).
-I'm thankful that God doesn't change, even though the weather does!

Also thinking about the death of Bin Laden, and the response to it. Someone kindly put it, "it is healthy to hate evil, but not to hate a human." God does not call us to hate people, and while I completely agree that our military acted correctly, I don't think Americans need to be quite so joyous over his death. God will judge him... opinions?

I am thankful for... God's provision in our lives

From the kitchen... I have been in a cooking lull lately. I am ready for garden goodies, but we haven't been able to plant yet.

I am wearing... old jeans, old t-shirt and old zip up sweatshirt... just hanging around the house today.

What's Cooking?

In an attempt to insure my family doesn't starve, I've been cooking. :) It's not necessarily glamorous, fancy or even really healthy, but we've been enjoying it.

Some pictures...

Gina's Veggie Cheese Ball was the inspiration for this. Initially I planned to follow her recipe, but then tweaked it based on ingredients I had, then ended up making it into more of a dip and less of a cheese ball, and well, it no longer looked like her recipe. But, I do plan to make her recipe this summer when I have fresh broccoli on hand. Items I added: sour cream, ranch dressing, garlic salt, shredded monterey/colby jack. The verdict? Bible study ladies LOVED it!

Raspberry Crumb Pie. I am notoriously bad at labeling frozen foods, so I thought I was grabbing cherries from the freezer. When they thawed they were actually red raspberries, so I just went with it. YUM!

The real Cherry Crumb Pie. We love cherries and crumbs. This one didn't quite make it to Pie Night Fellowship... this pie asked to stay home.

Cheesy gooeyness (spell check assures me that isn't a word) for the lasagna-- cottage cheese, parmesan cheese, garlic, eggs and pepper. Lasagna is one of my husband's favorites.

So there you have it, another food-filled post. After all of that cheesy-sweet-filling-food I am hungry for salad.

Outside my window... thunder, lightning, rain, wind and a high of 60 degrees. It looks cold but sure doesn't feel that way! Tomorrow were back to the 40s... and the 10-day forecast shows lots of "April showers."

I am thinking... about the enjoyable weekend we had with my parents, and how I wish we could do it more often

I am thankful for... my parents being able to visit, and for just completing an hour and a half of uninterrupted office work (thank you, Matt, for taking a nap!)

From the kitchen... I'm working a catering job tonight so my husband is having leftover pizza and Matt is having pureed carrots. Tomorrow I want to do some crock pot cooking (maybe Cream Cheese Chicken). I also want to make Gina's veggie cheese ball for Ladies Bible Study. Both recipes are part of my "Bookmarked Recipes" and I really need to follow through with that! (And I just realized I only have enough cream cheese for one or the other...)

I am wearing... jeans, a new (to me) peach colored thin sweater and fuzzy socks

Why I Love Amazon

I placed an order Wednesday afternoon.

The order said it was estimated to arrive via UPS on Friday. It arrived Thursday at noon.

With Amazon's great coupons (from BabyTalk and American Baby magazines) and Subscribe & Save diaper deals, I paid $7.27 for the 204-count size 3 Luvs and $3.65 for the 100-count size 2 Huggies. That included shipping. Some days you can find even better deals, but my coupons were about to expire.

Sure can't beat that!

I knew there was a reason their logo looks like a smile. :)

Spring Weather

I am thankful for... a part-time job, food on the table, a roof over my head, my family, sunshine, coffee, etc.

From the kitchen... The cheese order finally arrived, so pizza and grilled cheese. The spare freezer in the garage died, so we lost some meat, including the pork shoulder I was going to make this week. Time to re-evaluate the menu. Oh, and snacks for my husband's Bible study group tomorrow night.

I've been struggling lately with comparing myself to others... not really "keeping up with the Jonses," per se, but keeping up with all of the fabulous homemakers, bargain shoppers, cleaners, teachers, Proverbs 31 women, etc. God continually has to remind me that I can't do it all, nor does he expect me to, and that we're all blessed with different talents. The ideas I read in blog posts shouldn't become my idol... serving God and my family is what's important.

Even if it doesn't look the same as everyone else.

Friday Favorite Things

-WONDERFUL news that all of my dad's cancerous spots and tumor are shrinking! Thank you, God!

-A smiley, happy baby waking up

-Prayers

-No bake cookies

-Coffee, of course. It has been a morning and afternoon staple around here this week.

-The cheese order arrived today

-The sun, when it makes an appearance.

-A post card at work from one of our favorite retired customers who is traveling in the southwest. That sounds jumbled. He's retired. He's a favorite customer. He's traveling.

-Some good bargains in the grocery circular. Tuna for 29c a can! We eat a lot of tuna salad in the summer.

-Having fun and getting paid for it, then coming home to my cute baby

-Thinking about, discussing and saving for a new-to-me car. I am a nerd like that.

-Putting a few dollars in the "Beach Fund" envelope and knowing we're getting closer every day.

-"Big people" clothes on babies. It is just so cute. (I'd share pictures but the camera is broken.)

Today my cute baby boy is happy, peaceful, content, napping well, eating well, and enjoying books and rattles. I washed dishes while he happily played in his saucer, did payroll and other office work while he napped, and got some of my Bible study finished while he played.

I keep reminding myself of this... it becomes my mantra some days.

Like when I fill the sink with soapy water and only accomplish cleaning 3 plates.

Like when I try to cut up mango and get half of it finished.

Like when I sit down to work on the computer.

Like when the work schedule is incomplete.

Like when the phone keeps ringing with "Can you please?" and "When will you have time to...?"

Like when the laundry sits in baskets for days.

Like when he'll only nap in my arms.

Like when I just want to cry because I can't seem to get ANYTHING accomplished and I know my husband wonders what in the world I do all day.

Matt has been fussy lately... can you tell? I think he might be teething. His sleep is so restless at night. During the day he just wants to be held. Then I feel bad because I get so frustrated with his fussing and crying. He can't help it... he's only 5 months old. But I'm his mama... I just want it all to be okay.

Outside my window... Happy Spring! It is 7pm and still light outside. The grass is beginning to green and the daffodils are peeking out of the ground. The neighbor's yard has crocuses-- I would really like to have some in our yard. I need to find out more about them.

I am thinking...that a clean house is so enjoyable. This is two weeks in a row. It really is refreshing.

I am thankful for... sunshine, a stroller, and a chance to walk with the cutie pie. He is fascinated by the sights.

From the kitchen...Lots of leftovers to enjoy-- cabbage & noodles, cheesy rice, shredded beef, and corn. I'm hoping the cheese order came today on the milk truck. I want to make homemade pizza, grilled cheese sandwiches, enchiladas, etc.

I am wearing... jeans and an old high school soccer t-shirt

I am creating... landscaping plans, including the front of the house (some shrubs for year-round green) and some mini-gardening plans for along our new fence. I am so excited!

I am reading... I am mostly reading for Bible study (Philippians). Last week I enjoyed "Better Homes and Gardens" while sitting in the sun.

I am praying...

-for my dad (sinus infection, chemo and CAT scan results this week)

-for all of my pregnant friends

-for the people of Japan

-for financial wisdom

I am hoping... that business at work picks up... they've started cutting hours (hasn't had a big effect on me yet). I really want this business to succeed. The owner has put so much work into it.

Around the house... front door and kitchen window open a crack... enjoying that fresh air

One of my favorite things...cuddling with my little man. He is currently sleeping on my lap.

Pondering these words... "Life is in the little moments."

A few plans for the rest of the week... work, monthly birthday party, grocery shopping-- same daily stuff :)

Outside my window... Huge old pine tree in the neighbor's yard, brown wet grass, clouds threatening more rain

I am thinking...that a clean house is so enjoyable. Now if I could just keep it that way.

I am thankful for... my brother and his visit (he always cleans my stove... this time he did the fridge too)

From the kitchen... We ate so well with my chef-brother visiting. I have the urge to bake. I also need to come up with a menu plan for the week that uses freezer and pantry food... trying to watch expenses after enjoying a few great meals out.

I am wearing... jeans, green t and Adidas sandals that I've had for 10 years... so comfy

I am creating... a "beach fund"

I am reading... I bought a big bag of books at a library sale for $2. Now I just need to decide which one to start. Matt got all kinds of "new" books-- dinosaurs, bulldozers, Noah's Ark

I am praying...

-for my dad (tired and having difficulty eating again, goes for a CAT scan this week)

-for the people of Japan

Outside my window... Patches of snow and mud... but the sun came out today!

I am thinking...that I am grateful for happy, pleasant people

I am thankful for... a flexible part-time job... I like waitressing (most days!). Also thankful for all of the appliances working after last week's water-in-basement issue.

From the kitchen... I made really good taco soup in the crockpot yesterday... thinking maybe I should share the recipe with you. Spaghetti sounds good and easy tonight. I think we're almost out of bread, so probably a batch of that.

I am wearing... work clothes: khakis, long sleeve black shirt with a short sleeve red & black tie-dye, and the most comfy Adidas socks. They're amazing... I didn't believe "good" socks would make a difference supporting my feet, but they sure do!

I am creating... I have a to-do list a mile long in my head that needs to be committed to paper. I also have a boxes of old photos that need organized and re-boxed.

I am reading... My Secret Sis gave me a huge basket of books... what a great gift! Currently reading a Max Lucado book, but I can't remember the title.

I am praying...

-for my dad (feeling good and eating well! Chemo again this week)

-for all of my pregnant friends

-for my cousin as she interviews for jobs

-for financial wisdom

I am hoping... the skunk smell goes away soon. Any suggestions? The bugger sprayed the foundation of the house (that's our guess), and the house has smelled awful for the past week. I can usually mask the smell with candles. Ugh!

Around the house... I have a clutter issue. And an issue getting rid of stuff. Clearly.

One of my favorite things... A glass of Coke with a few ice cubes and a bowl of buttery & salty popcorn... okay, that's two things, but they go so well together.

I am thinking...that today just isn't my day

I am thankful for... the women's ministries at church. Looking forward to the Secret Sis 2011 season and starting a new Bible study this week

From the kitchen... It's after 5 and I still don't know what's for dinner. I think we'll clean out the fridge and call it "good enough."

I am wearing... jeans and a long sleeve t-shirt... ahhh, comfort

I am creating... I have a to-do list a mile long in my head that needs to be committed to paper. I also have a boxes of old photos that need organized and re-boxed.

I am reading... I started "One Thousand Gifts" because I heard it was great, but I just can't get into it. I also bought two Nicholas Sparks books with a Christmas gift card and I'm looking forward to starting those.

I am praying...

-for my dad (a week off from chemo but still feeling side effects)

-for all of my pregnant friends

-for my cousin who recently lost her job (I am sure God has a bigger plan)

-for financial wisdom

I am hoping... the washer, dryer and freezer will all still work after being flooded in the basement (good news is the furnace, hot water heater and dehumidifier are all working)

Around the house... it looks as if I never ever clean. I do dishes in 10-minute increments when Matt is content by himself, so I never get ahead.

Because I need to pray more.
Because accountability is good.
Because sometimes (lots of times) I ramble when I pray.
Because I often find it hard to focus.
Because I need encouragement as a [relatively] new mom.
Because the hospital apparently forgot to include "Learning How to Pray for Your New Baby" when they sent us home.
Because it sounds like a great idea.
